Ingredients

Instructions
  1. Ensure your oven racks are evenly placed to accommodate two pans. Preheat oven to 425°.
  2. Combine all sauce ingredients and mix well. Set aside.
  3. Combine shredded cheeses. Set aside.
  4. Lightly grease two pizza pans (or two 14"x10" baking pans) with olive oil and set aside. On floured surface, roll out each ball of thawed pizza dough into two circles (or two rectangles) so that they are large enough to extend about an inch over your pans. Lightly sprinkle tops with flour to make transfer to pans easier and prevent dough from sticking. Gently fold dough over once, then twice and transfer to baking pans. Unfold and tuck dough along rims of pans.
  5. Top each pizza with 1 to 1 1/4 cups sauce, followed by 3 cups of shredded cheese.
  6. Bake for 10 minutes. Switch pans and bake for an additional 10 minutes until cheese is bubbling and crust is golden brown.
