If you're going to make these in advance, leave the assembly until ready to bake. If you blend the vegetables and gravy too far in advance, they will absorb the gravy and become mushy.

Instructions
  1. Preheat oven to 425°. Combine green beans, carrots, onion, sweet potatoes and white potatoes on a large baking sheet. Toss with vegetable oil, salt and pepper. Bake for 15 minutes, toss and cotinue cooking for 10 minutes or until vegetables are golden brown. Reduce heat to 400° when complete.
  2. While vegetables are cooking, combine mushroom broth, onion powder, soy sauce and worcestershire sauce in bowl. Set aside.
  3. In medium-sized saucepan over medium-high heat, add vegetable oil and minced mushrooms. Allow the mushrooms to cook (without tossing too much!) until the water has steamed away and mushrooms have caramelized. Set mushrooms aside.
  4. In same saucepan, melt butter over medium-low heat and add chopped garlic. Saute for 1 minute. Add flour and whisk for 1-2 minutes. Slowly whisk in seasoned mushroom broth, red wine, fresh thyme, tomato paste and salt. Continue stirring until gravy has thickened. Add cooked mushrooms and set gravy aside.
  5. Roll out store-bought pie crust on floured surface. Cut into equal sections if using individual serving dishes or leave as is for casserole-style dish.
  6. Divide cooked vegetables and gravy among individual serving dishes (or one large casserole dish). Place crust (s) on each dish and pinch edges tight. Whisk together egg and water and gently brush top of dough. Slice a 1" X to allow steam to escape. Bake at 400° for 20 minutes or until crust is golden brown. Serve Immediately.
